Gutted, skin-on and filleted
Coley has distinctive coal-coloured skin, with a thick white line running along it’s body. Raw fillets have a pink-grey flesh that becomes paler and flaky when cooked. Can be used deep-frying in batter or panko breadcrumbs or poached for use in fish pies.
